Tofu Tiramisu

During the holidays its nice to have a dessert that you make ahead of time with no fuss. The tofu blends so naturally into this crowd-pleasing dessert which requires no cooking, just assembling. Mascarpone cheese is a naturally sweet Italian cream cheese for which there is truly no substitute. You can find it in Italian deli's, and in the cheese section in the grocery department.

Ingredients:
1 (12.3 oz) box Mori-Nu® Lite Tofu Extra Firm
8 oz. mascarpone cheese
1/2 cup powdered sugar
3/4 cup frozen light nondairy whipped topping, thawed
2/3 cup freshly brewed espresso or strong coffee
3 T. coffee liqueur such as Kalhua
2 (3-oz) packages lady fingers (24 whole lady fingers total)
1/2 tsp. cocoa powder
 
Instructions:
  1. In a food processor or blender, puree tofu until smooth.
  2. In a large bowl, using an electric mixer on the low setting, beat together the mascarpone and pureed tofu. Add the powdered sugar and beat just until blended. Fold in the whipped topping.
  3. Un a measuring cup, combine the espresso and the liqueur.
  4. Separate lady fingers. Arrange one-third of the lady fingers (16 halves) evenly over the bottom of an 8x8" pan. Using a spoon, drizzle one-third of the coffee mixture over the lady fingers. Gently spoon one-third of the mascarpone mixture evenly over. Repeat layering: lady fingers, coffee mixture and mascarpone mixture. Continue layering, and finish with a mascarpone mixture layer. Sift the cocoa powder over the top. Cover and chill over night.
