A large, specialized meat processor of red and white meats had goals for improving the profitability and quality of products. This meat processor wanted to reduce the amount of chicken meat used, and to optimize costs while improving the texture and taste in two formulas.
After a series of trials, Solae prepared potential product solutions and presented them to the processor’s team. As a solution, Solae developed an innovative family of products to meet the processor’s quality and cost targets.
Upon review, the customer agreed these prototypes met their needs. The texture of the high-quality cutlet had improved while there was an 11 percent decrease in the chicken meat content. The solution was so successful, it created new opportunities for the processor with meat-free products and line extensions.
